Description

An essential filler for burritos!

Ingredients

  • 30ml olive oil
  • 1 jalapeño chile, seeded and finely chopped
  • 2 garlic cloves, finely chopped
  • 1 medium onion, finely chopped
  • 2 cans black beans, drained
  • 2 tbsp fresh coriander, finely chopped
  • 1 tsp ground cumin
  • 1 tsp Tabasco sauce
  • Salt to taste

Instructions

  1. Sauté onion, jalapeño and garlic in olive oil over a medium heat until onion softens.
  2. Add beans, seasonings and Tabasco sauce.
  3. Reduce heat to lowest setting, stir before covering with a lid for 10–15 minutes.

Notes

  • Adjust Tabasco to your preferred heat level
  • Great as a burrito filling, taco filling, or on its own as a side
  • Can be made ahead and reheated
