Description

Serves 5 people as an appetiser, or 2 for a rich meal by itself!

Ingredients

  • 20 medium sized mushrooms
  • 30g butter
  • 4 cloves garlic, minced
  • 160g fresh spinach, washed
  • 225g cream cheese
  • Salt and pepper, to taste
  • 30g gluten-free breadcrumbs
  • 60g parmesan, grated finely

Instructions

  1. Preheat oven to 190°C.
  2. Remove stems from mushrooms and place the top halves upside down on a baking sheet.
  3. Mince the stems.
  4. Melt butter in a pan and add minced mushrooms and garlic. Cook for 2 minutes, stirring.
  5. Add the spinach and cook until wilted.
  6. Add cream cheese, salt and pepper. Stir until cream cheese is melted and all ingredients are combined.
  7. Spoon the mixture evenly into each of the mushrooms.
  8. Mix breadcrumbs and parmesan and sprinkle over top of mushrooms.
  9. Bake for 12–15 minutes or until golden brown.
  10. Serve immediately.

Notes

  • Use gluten-free breadcrumbs for GF version
  • Makes a rich main course for 2 people
  • Serve immediately while hot and crispy
